Sausage and Peppers My dinner tonight
Ingredients
8 sausage links (sweet or hot)
1 large red pepper
1 large green pepper
1 16oz can crushed tomatoes
2 medium onions
2 table spoons olive oil ( not extra virgin)
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning
Cook sausage in pan over medium heat until done. Remove sausage set aside let pan and fat rest, Clean and slice up the peppers into thin strips. Peel and clean the two onions, slice onions in half and then into thin slices.
Place peppers and onions into pan over low heat, sprinkle salt over the top of the peppers and onions then add 2 table spoons of olive oil. Let simmer in pan for 30 minutes or more stirring occasionally. When peppers and onions become soft pour them into a 2 quart pot add can of crushed tomatoes along with the sausage. add the pepper, garlic powder, and Italian seasoning. Bring to a simmer and let simmer stirring occasionally for 30 minutes or more.
Makes 4 servings of two sausage links each
I enjoy this on Italian bread with mozzarella cheese and baked in a 400 degree oven for 5 minutes or less but you can eat it with out the bread and cheese. Small glass of wine and that's a meal.

Music Calms
I always play music while cooking. It is what I enjoy. Who else has that same Enjoyment?
I find it to be relaxing having the music playing in the back round. I work best when I am calm, A small glass of wine helps in the process.

Ever try to fry water?
This queston is not that far fetched. I have had many friends in my life that have had no Idea what to do when it came to cooking. I had a friend who made Spagetti Sauce once, she never really cooked before. The only mistake she made was not simmering the sauce long enough but the dinner had good taste. She learned after asking her mom and friends.
I remember when I was 13 my mother god rest her soul was in the hospital and I called my grandmother who talked me through how to make dinner for my father and younger brother while my mother was in the hospital. The first meal I ever made was Stuffed Chicken Mashed potatoes and corn. The gravy Sucked I did not catch on how to make gravy to that until I was older. Oh well can not win them all.
Cooking is nothing more then common sense. If you can pay attention to what is being told to you by friends or the recipe you can create simple yet deliciuos meals. I did it at 13 and yes I have made my share of mistakes as I have tried to be creative. This is how we learn, Mistakes and practice. So fry on!!!!

Heart Warming Chili
Ingredients
1 pound ground beef
1 pound ground pork
1 medium onion
1/2 cup chopped green peppers
1 can 15 oz tomato sauce
1 can 15 oz beans ( type is your preference I use red kidney beans)
1 can 15 oz diced tomatoes
1 packet Chili seasoning mix ( there are many popular brands out on the market)
1/4 teaspoon Garlic powder ( 1 or two garlic cloves minced can replace this)
Below are optional ingredients and amounts are your decision
Set aside Shredded cheddar cheese , sour cream, chopped scallions, chopped hot peppers
Preparation
In a large pot or dutch oven or even a crock pot over medium heat add brown the beef and pork until fully cooked making sure to stir and keep the meat broken up into very small pieces. Then drain grease if you wish. It does add flavor if you leave some or all of it. Place meat aside to be re added later
In the same pot with some of the fat from the meat over a medium heat add the onions, minced garlic, and chopped green peppers
Once the onions are transparent add the beans diced tomatoes cook for 20 minutes over medium heat. If you did not use minced garlic now you can add the garlic powder.
After 20minutes add the tomato sauce and bring back to a simmer. Then add the seasoning and the cooked meat.
Let simmer for at least an hour or longer if you prefer it can simmer for 3 to 4 hours it will not matter as long as it remains covered.

4 cups Shredded Potato ( 4 Large Potatoes)
1 egg slightly beaten
3 tablespoons all purpose flour
1 tablespoon shredded onion ( can use more or less depending on taste)
1 teaspoon salt
1/4 teaspoon pepper
Cooking oil for frying
Simple instructions
Place oil in frying pan and start heating ( remember all oils are not the same you should know the smoke point temperature of the oil you are using as to not degrade the oil check the web link below)

Mix together all ingredients in a large bowl
Always remember hot oil spatters and we must be careful not to burn ourselves Always pour away from yourself and flatten to a pancake look. Also use splatter shield to protect yourself.
When mixed and oil is hot enough place 1/3 cups fulls of mixture into pan and fry flipping once to fully cook both sides
( makes 6 servings)

Who is new to cooking
